Juan Mari Arzak (1942) is a Spanish chef considered one of the fathers of nouvelle Basque cuisine, a movement that revolutionised gastronomy in Spain by fusing tradition and innovation. Born in San Sebastian, he took the reins of the family restaurant Arzak, turning it into a benchmark of haute cuisine worldwide and earning three Michelin stars. His style is characterised by the reinterpretation of Basque recipes with avant-garde techniques and meticulous experimentation with ingredients. In his gastronomic laboratory, he has developed unique creations that have influenced generations of chefs. Together with his daughter, Elena Arzak, he has maintained the restaurant's excellence, consolidating its legacy in international gastronomy. He has received numerous awards, including the National Gastronomy Award and the Chef's Choice Award from the 50 Best Restaurants. His innovative vision and love of cooking have marked a before and after in contemporary gastronomy.
